I just had a dinner of scrambled egg whites, black beans, spinach, mushrooms, pesto and tofu. Can you say delicious, protein-fabulous and gluten free? Mmmmmmmmnomnomnom.

This has been your pointless post for the month. Thank you for tuning in. It gets lonely over here in Karen land - I have to share with someone.

We've been gluten-free for 10 days here, trying to clear up Chase's eczema. We're dairy-free, too, so it's been..well, hard! But we discovered that Fred Meyer (at least the one near us) has a pretty good gluten-free section. And there's a company called The Craving Place - they're in Bend! - that makes baking mixes...anyway, made the brownies tonight and they were GOOD. Better than any gluten-free stuff I've had so far.

Anyway, wanted to tell you. :-)

Also, have you seen this Guide to Gluten-free Beer?

Oooh, I'm heading back to Bend this weekend and I'll have to try that! And I have seen that guide (I think it's the first or second thing I checked out upon diagnosis!) I had a gluten-free beer last night... It actually tasted a lot like root beer, just happened to have alcohol. I'm not sure what i think. I might wait until I'm fully deglutenized, then have the occasional beer. It's so hard!

This could be a sign that your body is craving protein. Very, very delicious forms of protein...
